These casings blow fibrous casings out of the water when it comes to smoked sausage. They absorb smoke at least twice as good as fibrous casings and dry out better allowing for a better texture of the finished product.

These sacks seem expensive until you try to find some. Butchers Supply is the only place I can even find them. Good quality and different color stitching for hot or mild. If you smoke your sausage, only way to go.
